Grown in Agaro Gema, Jimma, Ethiopia

This coffee is richly complex. Chocolate with plum and ripe blackberry coulis. The solid acidity lends a rather nice structure that doesn’t dominate the lighter apple (malic) sweetness that comes to the front as it cools.

This is particularly great in vacuum pot, if you have the patience. But it also works well as straight espresso or pour-over.

The Agaro woreda (region) well known for stellar coffees. Situated in Gera, a subregion of Agaro the Kolla Bolcha cooperative formed only a few years ago, but their coffee reflects a much deeper expertise and and is a stellar example the region’s potential. Impeccably tended, harvested and processed, they’ve brought out an incredible amount of flavor, complexity and love in this bean. The care in the processing alone shows that: they first de-pulp the cherry and then soak the beans overnight to remove any residual sugars from their surface (to avoid fermented off-flavors) before carefully sun-drying for 8+ days, making an incredibly lush and clean cup.

Our importer has had a long-standing relationship with the Kata Mutaga union, the overarching organization that Kolla Bolcha belongs to, and has secured first rights to selecting lots from Kolla Bolcha. Basically, this means that they get the best of the best. Combine that with their ability to ship it earlier than most, it arrives in the US as fresh as fresh is. I anticipate that this farm's coffee will continue to increase in quality over the years to come.

The delicate aromatics that we love dissipate first, and push us to keep the coffee as fresh as possible. So the source of the coffees we include in our subscription will change throughout the year, but our philosophy for selecting them won’t.. We prefer coffees that are complexly fruit-forward, and gently sweet: floral aromas underscored with berry, spice, stone fruit flavors; and tempered with enough sweetness to balance it. The vibrancy of a truly great coffee, delicately roasted while it’s in its peak window is one of the most beautiful experiences to be had, we think. We think you’ll love it.

We ship on Wednesdays via USPS First Class mail, so depending on where you live, you should have coffee in a day or two after that. Just enough time for it to degas.

You have almost complete control over how your subscription works. We can’t change the day we roast (yet), but beyond that, you are able to manage your subscription from your account panel in ways most subscriptions don’t allow you to do.

You can adjust how much, how often or pause for any reason. On vacation? That’s awesome. We’ll hold off on sending your next bag until you get back. Not drinking as much as you used to? Hmm, well ok, you can choose to get less frequent deliveries until you are back up to speed. Guests in for the week? Sounds fun. Add a bag to your next delivery.

Of course, you can always reach out to us directly if you need to. The only thing we ask is that you make any changes to your scheduled delivery before midnight on the Monday before we roast. And since you pay as you go it’s easy adjust on the fly.
