Complex. Deep. Fall-ish, or maybe memories of spring. Light, raw honey lifted by crisp, bright berries (raspberry, bing) acidity with hints of lemon on the main floor. Then, jasmine and sweet floral aromatics dance on the roof. Overall, light-bodied, but deeply layered.

Heritage + meticulous everything

The famed Hacienda La Minita is one of the farms that first you learn when starting in coffee. For decades, they have be at the forefront, developing and improving their equipment and methods to produce some of the world’s most memorable coffees. Every step of the process is intensely cared about and tightly controlled, from variety selection, planting, harvesting ripe cherries, extensive sorting at almost every stage, to meticulous drying and more. This is possible largely because they have the desire to, but also because everything happens right on the farm and under their action. It’s an amazing program and they are still innovating, boasting the most technically advanced mill anywhere in the world.

Melico Los Pinos is a plot separated from Hacienda La Minita’s main farm, located directly across the Tarrazu River near their mill, Beneficio Rio Tarrazu. It was actually a separated lot long before their microlot program (Beneficio Rio Tarrazu microlots) began because it was noticed in a daily cupping. The cattura growing there is brighter with a cleaner complexity and vibrancy than the plots across the river and still stand out on it own.

The delicate aromatics that we love dissipate first, and push us to keep the coffee as fresh as possible. So the source of the coffees we include in our subscription will change throughout the year, but our philosophy for selecting them won’t.. We prefer coffees that are complexly fruit-forward, and gently sweet: floral aromas underscored with berry, spice, stone fruit flavors; and tempered with enough sweetness to balance it. The vibrancy of a truly great coffee, delicately roasted while it’s in its peak window is one of the most beautiful experiences to be had, we think. We think you’ll love it.

We ship on Wednesdays via USPS First Class mail, so depending on where you live, you should have coffee in a day or two after that. Just enough time for it to degas.

You have almost complete control over how your subscription works. We can’t change the day we roast (yet), but beyond that, you are able to manage your subscription from your account panel in ways most subscriptions don’t allow you to do.

You can adjust how much, how often or pause for any reason. On vacation? That’s awesome. We’ll hold off on sending your next bag until you get back. Not drinking as much as you used to? Hmm, well ok, you can choose to get less frequent deliveries until you are back up to speed. Guests in for the week? Sounds fun. Add a bag to your next delivery.

Of course, you can always reach out to us directly if you need to. The only thing we ask is that you make any changes to your scheduled delivery before midnight on the Monday before we roast. And since you pay as you go it’s easy adjust on the fly.
